I came to Nova Scotia as a student from Kerala. Like every Malayalee who moves here, I quickly realized that the hardest part of living abroad wasn't the weather—it was the food. The meat in local supermarkets is cut for western roasting or grilling. Whenever I tried making a proper beef fry or pork curry, the texture was wrong, the cuts were awkward, and the fat proportion was completely off.
After my studies, I started working as a professional chef. On my days off, I spent hours driving to farms and local butchers across the province, searching for the right meat and processing it myself, the way we do back home. The result was exactly what I had been missing. I realized it was an injustice not to share this with my fellow Malayalees living in Canada. That is why Flavoury Meats exists: to give our community the proper cuts we need for the food we love.
